What exactly is a Kiritsuke?

In Burrfection Store, when we use "Kiritsuke" as a noun instead of an adjective, we mean a double-edged Kiritsuke-Gyuto. The term Kiritsuke can be confusing especially with single bevel knives involved. The proper/actual Kiritsuke knife is a single bevel Japanese knife, which we do not currently stock. A double-edged Kiritsuke-Gyuto has the profile shape of Kiritsuke but it is typically a san mai construction double-edged gyuto, with a Kiritsuke profile.
